Stuffed Mushrooms
Stuffed Mushrooms is an moderately easy dinner. Made with 1 lb. mushrooms, 2 tbsp. oil, 1 (10 oz.) pkg. frozen, chopped spinach, 2 cloves garlic, minced and 2 egg whites, slightly beaten, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Wipe mushrooms and remove caps.
Saute whole caps in oil. Chop mushroom stems. Cook spinach according to package directions along with chopped mushrooms. Drain and squeeze to eliminate excess water. Combine with egg whites and bread crumbs. Fill mushroom caps with spinach mixture.
Place caps in an oiled ovenproof dish and bake at 350Β° for 10 to 15 minutes.
Use as garnish around roast meat or chicken. Also may be served as an appetizer.
