Stuffed Eggplant
Stuffed Eggplant is an moderately easy dinner. Made with 1 medium size eggplant, 2 tbsp. oil, 1/2 c. bread crumbs, 6 ripe olives and 1 egg, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Parboil eggplant for 20 minutes.
Remove to platter to cool. Slice lengthwise.
Scoop out pulp, leaving the shell of eggplant. Chop up all ingredients fine.
Mix well.
Put back in shell of eggplant.
Top with cheese.
Bake 25 minutes at 350Β°.
