Stuffed Eggplant

Parboil eggplant until tender, not soft.
Cut in half and scoop out inside, not break the skin. Heat the drippings; add gruond beef and let them brown and partially cook.
Add the bits of eggplant and refill the shells. Lay bacon strips over the top.
Place in a 350Β° oven for 10 minutes or until finished cooking.
