Stuffed Eggplant
Stuffed Eggplant is an impressive dinner you can prepare in about 1 hour 50 minutes. Made with medium eggplant, . sausage, medium tomatoes, diced, medium yellow squash and (6 oz.) cans tomato sauce, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Halve eggplant lengthwise.
Hollow out center.
Cook sausage; drain.
In a large bowl, mix sausage, eggplant centers, tomatoes, squash, onion, salt and pepper.
Mix well.
Stuff into eggplant shells.
Spoon 4 tablespoons of tomato sauce over each.
Mix bread crumbs, oregano, egg and remaining tomato sauce.
Spoon over eggplant.
Cover with cheese.
Bake at 350Β° for 1 1/2 hours. Serves 6.
