Stroganoff Of Beef is an impressive dinner. Made with 2 lb. lean beef round or tenderloin, cut into 1 1/2-inch cubes, 1/2 c. butter, 2 c. mushroom pieces, 2 c. bermuda onions, chopped and 1 tsp. pepper, this recipe delivers authentic, satisfying flavors. Brown meat cubes in butter.
Add onions and mushrooms and cook 5 minutes.
Add tomato paste, sliced olives, salt, pepper and Worcestershire.
Stir into meat mixture; cover and simmer 1 hour. Mix cornstarch and water; stir into mixture.
Add sherry.
Cover and simmer 10 minutes.
Just before serving, add sour cream. Serve with cooked noodles or browned potato balls.
