Strawberry Rhubarb Soup is an easy dinner. Made with 1 pt. strawberries, hulled and sliced, 1 lb. rhubarb, trimmed and cut into chunks, 1 1/4 c. orange juice, 1/2 c. sugar and 1/4 c. orange sections, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

In a 3-quart saucepan, heat fruit and juice to boiling. Simmer about 10 minutes; remove from heat.
Add sugar; cool.
In covered blender at low speed, blend soup half at a time.
Pour into a bowl; add orange sections.
Refrigerate covered.
Serve in a chilled bowl; garnish with strawberry slices.
