Stilton-Stuffed Mushrooms
Stilton-Stuffed Mushrooms is an easy dinner. Made with 2 tbsp. melted butter, 16 large mushrooms, 2 tbsp. freshly squeezed lemon juice, 1 large egg and 1/2 lb. stilton cheese or other blue cheese, crumbled, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Wash mushrooms and pat dry with a paper towel.
Remove stems gently.
In a bowl, toss mushrooms with lemon juice; drain.
Add 2 tablespoons melted butter; toss with mushrooms.
In a small bowl, beat the egg; add cheese.
Spoon this into mushroom caps equally. Broil mushroom caps 8 to 10 inches from heat source for 5 to 6 minutes or until golden brown; remove.
Use tongs to place on a serving platter.
Serve hot.
