Squash Palermo
Squash Palermo is an easy dinner. Made with 4 medium yellow squash, 1/2 c. olive oil, 2 cloves garlic, crushed, 1/2 c. romano cheese, freshly grated and 1 c. seasoned bread crumbs, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Mix bread crumbs, cheese and garlic together and set aside.
Oil an 8 x 8-inch baking dish with 3 tablespoons olive oil.
Layer bread crumbs and squash in dish, starting with crumbs and ending with crumbs on top.
Drizzle the rest of the olive oil on top of ingredients in dish.
Bake at 350Β° for 35 to 40 minutes, covered.
Remove cover and bake another 15 to 20 minutes.
