Squash Casserole
Squash Casserole is an moderately easy dinner. Made with 6 yellow crook-neck squash, ritz crackers, 2 cans cream of chicken soup, 1/4 c. grated onion and 1 beaten egg, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Slice and cook 6 yellow crook-neck squash in salted water until tender (15 minutes or so) and divide in 2 portions.
In bottom of casserole dish, place a layer of crumbled Ritz crackers. Next layer is 1/2 of cooked squash mixed with soup, onion and egg. Next layer is cream cheese, cut in small pieces.
Next layer is remaining squash.
Top with crushed Ritz crackers and dot with butter.
Bake at 350Β° for 30 minutes until heated through.
