Squash Casserole
Squash Casserole is an moderately easy dinner. Made with 2 lb. squash, washed and cut in 1/2-inch slices, 1 medium onion, peeled and sliced, 2 beaten eggs, 1/2 stick butter, melted and 1 c. grated sharp cheese, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Place squash and onion in a saucepan.
Cover in water barely. Cook until tender (about 15 minutes).
Drain and mash (not too fine).
In a shallow casserole dish, mix squash mixture with eggs, butter, cheese, salt and pepper.
Top with a little more grated cheese, crushed crackers and dot with thin pieces of butter.
Cook in a 350Β° oven for 30 minutes or until brown and bubbly.
