Squash Casserole
Squash Casserole is an moderately easy dinner. Made with 2 c. grated cheddar cheese, 8 medium squash or 2 pkg. frozen squash, 1/2 c. chopped onion, 1 c. sour cream and 1 can cream of mushroom soup, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Wash squash, trim ends and slice.
Cook squash and onion in salted water.
Drain well and mash.
Mix sour cream, cream of mushroom soup, eggs and cheese (and mushrooms and/or bacon, if desired) and pour into greased 2-quart casserole dish.
Sprinkle with crushed Ritz crackers and pour melted butter on top.
Bake, uncovered, at 300Β° for 30 minutes.
Serves 6 to 8.
