Squash Casserole
Squash Casserole is an moderately easy dinner. Made with 8 to 10 medium yellow squash, 1/4 c. bell pepper, chopped fine, 3 green/spring onions, chopped (green stems also), 2 eggs and 12 saltine crackers, crushed, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Cook squash until tender; saute onions and bell pepper in small amount of margarine.
Mix all ingredients, reserving 1/2 of cheese for top.
