Squash Casserole
Squash Casserole is an impressive dinner. Made with 1 lb. yellow squash, 1 tsp. salt, 1 c. chopped shallots, 1/2 c. chopped celery and 1/4 c. chopped mushrooms, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Boil squash with salt until tender.
Whip squash until smooth. Saute shallots, peppers, celery and mushrooms with stick of margarine.
Blend egg, milk and oatmeal.
Combine drained squash, vegetables and egg mixture.
Add pimento.
Pour into large buttered casserole and cover with bread crumbs.
Bake at 400Β° for 30 minutes.
