Squash Casserole
Squash Casserole is an moderately easy dinner. Made with 6 to 8 medium squash, 1 medium onion, chopped, 1 stick margarine, melted, salt and pepper to taste and 1 egg, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Cream together egg and mushroom soup.
Cut up squash; cook until tender and all the water has cooked out of them.
Add margarine (1/2 of margarine), salt, pepper, onion and mushroom soup with egg mixture.
Let cook a little longer.
Pour into casserole dish (spray with Pam).
Crush enough Ritz crackers to cover top and melt margarine (1/2 stick) and pour over top.
Cook at 350Β° for 30 minutes.
