Squash Casserole
Squash Casserole is an moderately easy dinner. Made with 8 medium squash, 4 strips bacon, 1 medium onion, chopped, 1/2 bell pepper, chopped and 1 c. saltine cracker crumbs, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Preheat oven to 350°.
Boil squash in salted water in saucepan until tender; drain.
Fry bacon in skillet; crumble and add with drippings to squash.
Add onion and bell pepper; mix well. Reserve small amount of cracker crumbs for topping.
Add remaining crumbs and eggs to squash mixture; mix well.
Pour into greased 3-quart casserole.
Top with reserved crumbs.
Dot with butter; sprinkle paprika and cheese over top.
Bake in a 350° oven for 30 minutes, or until done.
