Beat eggs until light.

Stir in sugar, beat until thoroughly combined.

Add lemon extract, anise seeds and anise oil.

Mix and sift together flour, baking powder and salt.

Add to egg mixture and mix thoroughly.

Add 3 to 4 tablespoons milk or enough to get dough to stay together enough to roll.

Chill 1 hour.

Roll on floured board to 1/2-inch thick and mark with springerle roller. Cut squares and set on cookie sheet to dry overnight or 8 to 10 hours.

Bake at 350Β° for 20 to 30 minutes or until browned on bottom.

Store in covered jar.

Makes 3 dozen.
