Spoon Bread
Spoon Bread is an moderately easy dinner. Made with 2 c. milk, 1/2 c. corn meal (yellow or white), 1 tbsp. butter, 1 tsp. salt and 1 tsp. sugar, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Heat milk to scalding; add corn meal.
Gradually add butter, salt and sugar.
Cook over moderate heat, stirring constantly until thickened.
Beat egg yolks until light.
Add small amount of hot corn meal mixture and mix well.
Add remaining hot mixture, stirring until well blended.
Beat egg whites until stiff, but not dry.
Fold into corn mixture.
Pour into buttered 1 1/2-quart casserole.
Bake in moderate oven at 375Β° for 45 minutes.
Serve immediately with butter.
Makes 4 to 5 servings.
