Split Pea Soup
Split Pea Soup is an moderately easy dinner. Made with 1 lb. dried split peas (2 c.), 3 qt. water, 1 meaty ham bone, 2 tsp. salt and 1/2 tsp. pepper, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Combine peas and water in large kettle.
Bring to a boil; simmer 2 minutes.
Remove from heat.
Cover and let stand 1 1/2 hours.
Add ham bone, salt, pepper, marjoram and onions.
Cover and simmer 1 1/2 hours.
Add carrots, celery, ham from bone and potatoes.
Continue simmering until tender, about 45 minutes.
Add more salt, if needed.
Makes about 3 1/2 quarts.
