Spinach-Stuffed Potatoes(Reduced Fat) is an moderately easy dinner. Prick potatoes several times and bake at 400° for 45 minutes until soft.
Cool slightly; cut potatoes in half lengthwise and scoop out potato pulp leaving 1/4 inch shells.
Place pulp in bowl, mash until smooth.
Add spinach, 3 tablespoons cheese and next 6 ingredients.
Fill potato shells with spinach mix. Sprinkle with remaining cheese.
Place on baking dish.
Bake at 350° for 30 minutes.
