Spinach Scalloped Franks
Spinach Scalloped Franks is an moderately easy dinner. Made with 2 1/2 c. sliced cooked potatoes, 1/4 c. chopped onions, 3 tbsp. shortening, 2 tbsp. flour and 3/4 c. milk, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Saute onions in shortening.
Add flour and make a paste. Slowly mix in milk to prevent lumping.
Heat, stirring constantly, until thickened.
Remove from heat and stir in 3/4 cup cheese until melted.
Add spinach.
Layer twice in casserole potatoes, franks and sauce.
Bake, covered, 45 to 50 minutes in 350Β° oven. Uncover and melt reserved 1/4 cup cheese on top.
Serves 4 to 6.
