Wash the spinach carefully or defrost thoroughly.

In large kettle, heat olive oil and saute onion and garlic for a few minutes until onion is transparent.

Add spinach.

Cover tightly for 2 to 3 minutes, then stir into onion.

Grease medium sized baking dish with butter.

When spinach has cooled slightly, stir in 2 beaten eggs and 1/2 cup Parmesan cheese.

Season with salt and pepper and pour into baking dish.

Sprinkle with remaining cheese over the top and dot with butter.

Bake at 375Β° for 10 to 15 minutes.

We serve this with rice on the side.
