Spinach Pasta
Spinach Pasta is an moderately easy dinner. Made with 1/2 c. spinach purée (1/2 pkg. frozen spinach), 2 1/2 c. all-purpose flour, 3 large eggs, 2 tbsp. olive oil and 1/2 tsp. salt, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Spinach thoroughly.
In blender or food processor. Measure cup purée and return to saucepan.
Cook for a minute or two over low heat to dry out as much as possible.
Combine with flour, eggs, olive oil, salt and nutmeg.
Dough; wrap in plastic and allow to rest at least 20 minutes before rolling and cutting.
