Spinach Madeline is an moderately easy dinner. Made with 2 pkg. frozen chopped spinach, 4 tbsp. butter, 2 tbsp. flour, 2 tbsp. onion, chopped and 1/2 c. evaporated milk, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Cook spinach according to directions on package.

Drain and reserve liquid.

Butter in saucepan over low heat; add flour blended and smooth but not brown. Add onion and cook until soft but not brown.

Add milk and 1/2 cup spinach liquid slowly stirring constantly to avoid lumps. Cook until smooth and thick.

Continue stirring.

Add seasonings and cheese which has into small pieces.

Stir until melted and combine cooked spinach.

May be served immediately or put casserole topped with buttered bread crumbs.

Be frozen and reheated.

Serves 5 to 6.
