Spinach Gnocchi is an moderately easy dinner. Made with 1 medium potato, 1/2 tsp. salt, 1 egg, 1 (15 oz.) can spinach, drained and 1 1/3 c. flour, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

Boil potato until tender, cool slightly and mash.

Stir in salt, egg, spinach and flour to make a stiff dough.

(Add more flour if you need to.)

Shape into 1-inch balls.

Heat butter in a 10-inch skillet on medium heat.

Saute onions; stir in cream and pepper.

Heat to boiling, reduce heat and simmer 10 minutes, until thickened.

Heat 4 quarts of water to a boil with 1 tablespoon salt.

Add 1/2 of gnocchi.

When they rise to top, boil for 4 minutes.

Remove and drain.

Repeat with other gnocchi.

Mix into cream sauce and top with grated cheese.
