Spicy Hot Black-Eyed Peas is an impressive dinner. Made with 3 slices bacon, 1 (17 oz.) can black-eyed peas, 1 (16 oz.) can whole tomatoes, undrained and chopped, 1 c. chopped onion and 1 large green pepper, chopped, this recipe delivers authentic, satisfying flavors. Cook bacon slices in large skillet over medium flame until crisp.
Remove bacon; crumble and set aside.
Stir all remaining ingredients except parsley into bacon drippings in skillet; bring to a boil over medium-high flame.
Reduce flame to low and simmer 20 minutes, stirring occasionally.
Spoon mixture into serving dish; sprinkle bacon and parsley over top.
