Spiced Cucumber Rings
Spiced Cucumber Rings is an moderately easy dinner. Made with 2 gal. large cucumbers (that are too big for other pickles, even if they are turning yellow), 2 c. pickling lime, 8 1/2 qt. water, 1 c. pickling vinegar and 1 tbsp. powdered alum, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Peel cucumbers and core out seeds.
Cut into rings, 1/4 to 1/2-inch.
Dissolve pickling lime in water.
Add cucumbers and soak overnight.
Use granite or glass container.
Drain off lime water, wash and rinse in clear water several times.
Mix pickling vinegar, powdered alum and food coloring together.
Pour over cucumbers (use granite container) and add enough water to cover cucumbers.
Simmer until tender.
Drain and discard liquid.
