Spice Cookies
Spice Cookies is an moderately easy dinner. Made with 1 1/2 c. margarine, 2 c. sugar, 3 eggs, 1/2 c. molasses and 4 1/2 c. flour, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Cream together margarine and sugar.
Add eggs and molasses; beat again.
In a separate bowl, sift together flour, baking soda and spices.
Add the dry ingredients to the wet and stir.
If necessary, gradually add more flour until you are able to roll a small ball of dough in your palms without it sticking.
Roll dough into 1-inch balls and roll them lightly in granulated sugar.
Place on ungreased cookie sheets and bake in 375Β° oven for 15 to 18 minutes, until very lightly browned.
They should be chewy, if overbaked, becomes tough.
