Spanish Rice Pie
Spanish Rice Pie is an moderately easy dinner. Made with 2 c. cooked brown rice, 3/4 c. grated sharp cheddar cheese, 2 eggs, beaten, 2 tbsp. chopped fresh parsley and 1/2 tsp. salt, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Preheat oven to 350Β°.
Combine rice and cheese.
In a separate bowl combine eggs, parsley, salt and pepper.
Add the two mixtures to spinach and pour into an oiled casserole or large pie plate. Mix wheat germ or bread crumbs with butter and spread on top. Bake 35 minutes or until set.
Serves 4.
