Spanish Rice
Spanish Rice is an moderately easy dinner. Made with 1 c. uncooked long grain rice, 1/2 c. chopped onion, 1 clove garlic, minced, 1 tbsp. corn oil margarine and 2 c. water, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Saute rice, onion and garlic in margarine in skillet until rice is golden brown.
Add water, bouillon, basil, cumin, tomato, salt and pepper; mix well.
Bring to a boil; reduce heat.
Simmer, covered, for 15 to 20 minutes, or until rice is tender and liquid is absorbed.
Top with cheese.
Let stand for several minutes to melt cheese.
