Spanish Meat Loaf
Spanish Meat Loaf is an moderately easy dinner. Made with 3 1/2 or 4 lb. cooked pork (boston butt is good), 1 large bell pepper, cut in strips, 1 large onion, sliced in rings, 1 large bottle catsup and broth (reserved from pork), this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

Cut pork into bite-size pieces and layer in casserole dish 1/2 of pork, then 1/2 of pepper strips, then 1/2 of onion rings.
Dot with 1/2 of catsup.
Repeat, using remaining half.
Salt to taste. Pour pork broth over this, barely covering meat, etc.
Bake at 400Β° for about 1/2 hour uncovered.
Keep mashing down onion tips and pepper tips so they won't burn.
