Spanish Chicken
Spanish Chicken is an moderately easy dinner. Made with 2 to 2 1/2 lb. chicken, 1 c. chopped onions, 2 cloves garlic, minced, 1/2 c. green pepper, chopped and 1/3 c. pimento strips, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Cut chicken into serving pieces; roll in seasoned flour and brown in hot oil.
Remove from skillet.
Cook onion, garlic and green pepper in remaining oil until onion is golden.
Add pimento and rice; stir over low heat 2 minutes.
Add remaining ingredients and heat to boil.
Pour into
2-quart casserole.
Arrange chicken on top.
Bake at 350Β° for 1 1/2 hours.
