Spanakopita(Spinach Pie)
Spanakopita(Spinach Pie) is an impressive dinner. Made with 1 medium onion, chopped, 2 green onions, sliced, 2 tbsp. salad oil, 1 (10 oz.) pkg. frozen, chopped spinach, thawed and 1 (12 oz.) container low-fat cottage cheese, this recipe delivers authentic, satisfying flavors. In a 10-inch skillet over medium heat, saute onions in oil until tender.
Drain all liquid from spinach and add to cooked onions in skillet.
Add cottage cheese, cream cheese, Feta cheese, dill, pepper and egg and mix well.
Remove half of phyllo sheets from package; keep the rest wrapped in plastic wrap or a wet tea towel to keep from drying out.
