Southwestern Corn Soup
Southwestern Corn Soup is an moderately easy dinner. Made with 3/4 c. slivered toasted almonds, 3 c. corn kernels (frozen), 4 tbsp. butter, 1/2 c. carrots, chopped and 1/2 c. celery, chopped, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Melt butter and saute carrots, onion and celery until tender. Add garlic and cumin; heat 1 minute.
Add broth, pepper and corn. Simmer 20 to 25 minutes.
Add almonds.
Process in blender or food processor.
Garnish with sour cream, Cheddar cheese, cilantro and green onion.
Serve with pita bread wedges, toasted with cheese, green chilies and black olives.
