Southern Spoon Bread
Southern Spoon Bread is an moderately easy dinner. Made with 3 c. milk, 1 1/4 c. yellow cornmeal, 3 eggs, 1 tsp. salt and 2 tbsp. butter or margarine, melted, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Bring milk to full rapid boil.
Stir in cornmeal.
Cook until very thick, stirring constantly, to prevent scorching.
Remove from heat and cool slightly.
Beat eggs well.
Add to cornmeal mixture with salt, butter and baking powder.
Beat for 5 minutes.
Pour into well-greased 1-quart round casserole.
Bake in preheated oven at 375Β° for 30 minutes or until golden brown.
