Southern Spoon Bread
Southern Spoon Bread is an moderately easy dinner. Made with 1 c. cornmeal, 1 tsp. salt, 2 c. boiling water, 2 tbsp. butter or margarine and 1 c. milk, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
In medium saucepan, gradually stir in cornmeal and salt into boiling water.
Cook over medium flame, stirring constantly until thick.
Add butter and milk; beat until smooth.
Let cool to room temperature.
Beat egg whites until stiff peaks form; set aside. Using same beaters, beat egg yolks until thick and lemon colored. Stir egg yolks and baking powder into cornmeal mixture, mixing well.
Gently fold in egg whites until well combined.
Pour into a greased 2-quart casserole.
Bake in a preheated 375Β° gas oven for 40 to 50 minutes until golden brown and puffy.
To serve, spoon from casserole and serve hot with butter.
