Southern Banana Pudding
Southern Banana Pudding is an moderately easy dinner. Made with 1 (4 serving size) pkg. vanilla or banana cream cook 'n serve pudding or pie filling, 2 1/2 c. milk, 2 egg yolks, well beaten, 30 to 35 vanilla wafer cookies and 2 large bananas, sliced, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Heat oven to 350Β°.
Stir pudding mix into milk in medium saucepan.
Add egg yolks.
Stirring constantly, cook on medium heat until mixture comes to a full boil.
Remove from heat.
Arrange layer of cookies on bottom and up sides of 1 1/2-quart baking dish. Add layer of banana slices; top with 1/3 of the pudding.
Repeat layers, ending with pudding.
Beat egg whites and salt with electric mixer on high until foamy.
Add in sugar; beat until stiff peaks form.
Spoon onto pudding.
Bake 10 to 15 minutes or until meringue is a light brown.
Serve warm or chilled.
