Southbridge Pea Soup

Cover split peas with water in large pot and add rest of ingredients except dried onion soup mix.
Bring to a boil and simmer 3 to 4 hours until peas are mushy.
Remove ham bone and bay leaf and add more water if soup is too thick.
Add 1/2 package dried onion soup mix and cook another 1/2 hour.
Serve with croutons.
