Sour Cream-Potato Salad
Sour Cream-Potato Salad is an moderately easy dinner. Made with 6 c. cooked diced potatoes, 1/4 c. melted butter, 1 bunch green onions, 4 hard-cooked eggs, separated and 1 c. chopped celery, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Toss potatoes lightly in butter.
Chop onions and tops; reserve small amount of tops.
Add onions to potatoes.
Chop egg whites; add to potato mixture.
Add celery, salt and pepper; toss lightly.
Mash egg yolks; add to potatoes.
Add sour cream, mayonnaise, mustard and sugar.
Mix well.
Pour over potato mixture; toss.
Garnish with reserved onion tops.
