Sole With Mushrooms, Lemon And Parmesan Cheese is an impressive dinner. Made with 8 small sole fillets (1 1/4 lb.), 1 medium onion, finely chopped, 1/4 c. fresh chopped parsley, 1 1/4 c. sliced mushrooms, fresh and 4 tbsp. margarine, this recipe delivers authentic, satisfying flavors. Saute onion, parsley and mushrooms in 3 tablespoons margarine. Stir constantly until onions become soft.
Mix in thyme.
Place fillets in greased baking dish; pour sauteed ingredients over fish. Sprinkle with salt, pepper and lemon peel to taste.
Pour wine over all.
Dot with remaining margarine.
