Smothered Corn
Smothered Corn is an moderately easy dinner. Made with 8 ears fresh/frozen corn, 1/2 c onion, 1/4 c chopped bell pepper, 2 tomatoes, peeled and chopped and 1/4 c bacon drippings or canola oil, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Fry bacon and reserve drippings.
Clean corn and cut lengthwise 1/4 inch from top; scrape corn with side of blade of knife to get corn milk.
Mix all ingredients except grease; season and pour in hot grease/oil.
Reduce fire to low.
Cook 45 minutes, covered, and stirring occasionally. Add water if it starts to stick.
