Skillet Green Peppers
Skillet Green Peppers is an moderately easy dinner. Made with 1 tbsp. olive oil, 3 c. (2 medium) green peppers, cut into strips, 1/4 tsp. each: oregano leaves, basil leaves and thyme leaves, 1/2 tsp. minced fresh garlic and 1/2 c. halved cherry tomatoes, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
In 10-inch skillet, heat olive oil.
Stir in remaining ingredients except tomatoes and croutons.
Cook over medium heat, stirring occasionally, until peppers are crisply tender (6 to 8 minutes).
Add tomatoes.
Continue cooking 1 minute.
Sprinkle with croutons; serve immediately.
