Sicilian Quiche
Sicilian Quiche is an moderately easy dinner. Made with 1 unbaked pie shell, 4 oz. grated mozzarella cheese, 2 c. peeled tomatoes, 1/4 lb. sliced salami, cut in strips and 1 medium onion, minced, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Bake pastry shell at 450° for 8 minutes.
Be sure to prick shell before baking.
Saute onion and green pepper.
Arrange a layer of 1/2 the cheese, 1/2 the tomatoes, 1/2 the onion and green pepper mixture and 1/2 the salami into the baked pie shell. Repeat layers.
Beat eggs; stir in milk and remaining ingredients. Pour over layers in pastry shell; bake at 450° for 10 minutes. Reduce temperature to 350°; bake for 35 to 40 minutes, until set.
