Shrimp Soup(Sopa De Camaron)
Shrimp Soup(Sopa De Camaron) is an moderately easy dinner. Made with 1/2 lb. small fresh or frozen uncooked shrimp, 4 c. chicken broth, 1/4 c. casera sauce, 1/2 tsp. salt and 1/8 tsp. ground saffron, this recipe delivers authentic, satisfying flavors. Peel and devein shrimp; chop.
Place shrimp, 1 cup of chicken broth and the Casera sauce in blender.
Cover and blend on high speed until smooth.
Heat shrimp mixture, the remaining broth, salt, saffron and pepper to boiling.
Mix cornstarch and water; stir into shrimp mixture to thicken.
Heat to boiling; cook and stir for 1 minute.
Remove from heat.
Stir in half and half. Garnish with parsley.
Yields 5 cups.
