Shrimp Newburg
Shrimp Newburg is an moderately easy dinner. Made with 6 tbsp. butter or margarine, 2 tbsp. all-purpose flour, 1/2 tsp. salt, 1 c. light cream and 1 c. milk, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

In a skillet or blazer pan of chafing dish, melt the butter. Blend in flour and salt.
Stir in cream and milk; cook, stirring constantly, until sauce thickens and bubbles.
Reduce heat of skillet.
Stir small amounts of sauce into egg yolks until completely blended.
Return to skillet and cook, stirring constantly.
About 1 minute after returning to skillet, add shrimp, wine and lemon juice; heat thoroughly.
Serve over toast.
