Shrimp Etouffee
Shrimp Etouffee is an moderately easy dinner. Made with 2 lb. fresh shrimp, 1/4 lb. margarine, 1 c. finely chopped onion, 1/2 c. finely chopped celery and 1/2 c. green pepper, chopped fine, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Split shrimp and season with salt, pepper and cayenne (be careful with the cayenne!); set aside.
Melt margarine and add onion, celery, green pepper and garlic.
Cook slowly until onion is wilted.
Add shrimp and let simmer for 20 minutes.
Dissolve cornstarch in water and add mixture.
Cook another 15 minutes, stirring occasionally.
Serve over cooked rice.
