Shrimp Creole
Shrimp Creole is an moderately easy dinner. Made with 2 c. boiled rice, 1/3 c. finely chopped onion, 1 chopped chili pepper, 1/4 c. chopped celery tips and salt and paprika to taste, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Line 1 1/2-quart casserole with 1 tablespoon butter.
Pour in half of boiled rice.
Place 1 tablespoon butter in pint size saucepan; add flour and brown.
Add onion and chili pepper and cook 5 minutes, stirring constantly.
Add shrimp, celery and tomato sauce.
Salt and paprika to taste.
Pour sauce in casserole; top with remaining rice.
Bake in preheated oven at 350Β° for 25 minutes.
Serve hot.
