Made with 1/4 c. butter or oil, 1 lb. medium shrimp, peeled and deveined, 2 lb. plum tomatoes, diced, 16 oz. feta cheese, crumbled and 8 oz. pitted kalamata olives (or other greek variety), this recipe delivers authentic, satisfying flavors. Heat butter or oil on medium heat in large, heavy skillet. Saute shrimp approximately 1 to 2 minutes on each side until opaque.

Transfer cooked shrimp with slotted spoon to warm plate and cover, set to side.

Saute tomatoes until tender on medium-low heat, approximately 8 minutes.

Add olives and saute for 2 minutes.

Add 1/2 crumbled Feta and melt.

Add shrimp and saute until warmed approximately 2 minutes.

Add reserved Feta to mixture, do not allow to melt completely.

Serve as appetizer with chunk of crusty bread or over angel hair pasta as an entrΓ©e.
