Shoo-Fly Cake(From True Pennsylvania Dutch...) is an moderately easy dinner. Made with 4 c. flour, 1 lb. brown sugar (light or dark), 2 sticks margarine, 1 c. molasses and 2 c. boiling water, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Preheat oven to 350Β°.
Mix flour, sugar and margarine (cut with pastry blender or two knives), forming crumbly mixture. Reserve 1 1/2 cups on the side.
Mix molasses, boiling water and baking soda (mixture will foam).
Now mix the flour mixture and molasses liquid mixture.
Pour into a 9 x 13-inch baking pan. Sprinkle with reserved crumb mixture gently on top so that it does not sink.
Bake for approximately 45 minutes. Check with a toothpick.
Wonderful served slightly warm.
