Shirley Mckenzie's Clam Chowder
Shirley Mckenzie'S Clam Chowder is an moderately easy dinner. Made with 6 slices bacon, diced, 1 large onion, chopped (1 c.), 2 large potatoes, diced, 1 tsp. salt and 1 bottle clam juice (8 oz.), this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Saute bacon until crisp in a kettle.
Remove and set aside for next step.
Stir onion into drippings in kettle; saute until soft. Add potatoes, salt and clam juice.
Cover and simmer 15 minutes or until potatoes are tender.
Stir in clams, tomatoes, thyme and cooked bacon.
Simmer 15 minutes longer.
You may use fresh clams instead of canned, but be sure to grind them and still juice the bottle of clam juice.
