Seafood Wild Rice Casserole
Seafood Wild Rice Casserole is an moderately easy dinner. Made with 3 c. cooked shrimp, lobster or crab, or 1 c. each, 1 c. wild rice (or mixture), 2 onions, 1/2 lb. sliced mushrooms and salt and pepper to taste, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Cook rice as directed. Drain, put in bottom of 2-quart casserole.
Brown onion, pepper and mushrooms in butter until soft.
Add to rice.
Mix in seafood and cover with cream sauce, sherry, herbs and pimento.
Bake at 375Β° for 20 to 30 minutes, until thoroughly heated. Serves 6 to 8.
